Method
 

Directions
  1. Bring a large pot of salted water to a rapid boil over high heat. Gently add the gnocchi and cook for about 2-3 minutes until they float. Drain and let them dry.
  2. In a large frying pan, heat 2-3 tablespoons of olive oil over medium-high heat. Arrange the gnocchi in a single layer and cook undisturbed for about 2-3 minutes until golden brown.
  3. Flip the gnocchi after the first side is golden and cook for an additional 2-3 minutes until all sides are browned.
  4. Reduce heat to medium, stir in minced garlic and sauté for about 1 minute. Add fresh spinach and cook until wilted, about 2-3 minutes.
  5. Season with salt, pepper, and red pepper flakes. Fold in crumbled feta cheese.
  6. Remove from heat and serve immediately on warm plates.
