Preparation Steps
- Wash 2 English cucumbers and slice each thinly, about ¼ inch thick, and place the slices in a large mixing bowl. Peel and thinly slice 1 small red onion, adding it to the bowl.
- In a separate bowl, combine ⅓ cup of apple cider vinegar, 2 tablespoons of granulated sugar, 1 teaspoon of salt, and a pinch of black pepper. Whisk together until the sugar dissolves.
- Pour the dressing over the cucumbers and onions in the mixing bowl. Toss gently until well-coated.
- Cover the bowl and chill in the refrigerator for at least 15 minutes.
- After chilling, taste and adjust seasoning as needed. Serve chilled.
