  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until shimmering, about 1-2 minutes.
  2. Add 1 diced onion, 1 diced carrot, and 1 diced celery stalk. Cook for 7-9 minutes until softened.
  3. Stir in 3 minced garlic cloves, 2 tablespoons of tomato paste, and 1 bay leaf. Cook for 1-2 minutes.
  4. Pour in ½ cup of white wine to deglaze the pot, scraping up any browned bits.
  5. Pour in 4 cups of vegetable stock and add 2 cans of white beans. Bring to a gentle boil.
