Preparation Steps
- Wash and slice your apples, lemon, and orange into rounds, leaving the peels intact. Place all the fruit slices into your Instant Pot.
- Pour enough water to cover the fruit, around 4 cups. Add cinnamon sticks, optional star anise, and vanilla extract. Stir to mix.
- Secure the lid, set the valve to 'Sealing.' Cook on high pressure for 15 minutes.
- After 15 minutes, allow natural pressure release for 10 minutes, then switch to quick release. Open the lid carefully.
- Strain the mixture using a cheesecloth-lined colander. Discard solids.
- Return strained cider to the Instant Pot. Stir in pumpkin puree and maple syrup, whisk until smooth.
- Serve warm or chilled, garnish with cinnamon stick or whipped cream if desired.
