Preparation Steps
  1. Wash and slice your apples, lemon, and orange into rounds, leaving the peels intact. Place all the fruit slices into your Instant Pot.
  2. Pour enough water to cover the fruit, around 4 cups. Add cinnamon sticks, optional star anise, and vanilla extract. Stir to mix.
  3. Secure the lid, set the valve to 'Sealing.' Cook on high pressure for 15 minutes.
  4. After 15 minutes, allow natural pressure release for 10 minutes, then switch to quick release. Open the lid carefully.
  5. Strain the mixture using a cheesecloth-lined colander. Discard solids.
  6. Return strained cider to the Instant Pot. Stir in pumpkin puree and maple syrup, whisk until smooth.
  7. Serve warm or chilled, garnish with cinnamon stick or whipped cream if desired.
