Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper.
  2. Roll out the puff pastry sheets on a floured surface, cutting into four squares.
  3. Heat olive oil in a skillet, sauté spinach, mushrooms, bell peppers, and red onion for 5-7 minutes.
  4. Mix sautéed vegetables with mozzarella, cream cheese, garlic, salt, and pepper in a bowl.
  5. Spoon the mixture onto the center of each pastry square, fold and seal tightly.
  6. Brush the tops with olive oil before placing them on the baking sheet.
